About the Role
The Hotel Cost Controller plays a pivotal role in maintaining the financial health and operational efficiency of the hotel. In this position, you will be responsible for monitoring, analyzing, and controlling all food, beverage, operational, and inventory costs. By ensuring robust stock controls, preventing wastage, and maximizing profitability, you will collaborate closely with key departments including Kitchen, Stores, Purchasing, Accounts, and Food & Beverage to uphold our high-quality service standards while safeguarding the bottom line.
Key Responsibilities
As the Cost Controller, your duties will span across critical operational and financial functions:
- Food & Beverage Cost Control: Monitor daily food and beverage expenses, analyze recipe costing/menu profitability, conduct regular spot checks, verify sales against actual stock usage, and prepare daily, weekly, and monthly cost reports.
- Inventory & Stock Management: Supervise receiving, storage, and issuance of stock items. Conduct routine physical counts, investigate stock variances, ensure strict adherence to FIFO (First In, First Out) procedures, and control slow-moving inventory.
- Purchasing & Receiving Oversight: Verify that purchases align with approved requisitions and budgets, ensure received goods match invoices, monitor supplier quotations, and prevent fraudulent purchasing activities.
- Financial Reporting & Analysis: Prepare accurate cost analysis and variance reports, support budget preparation, assist internal/external auditors, and offer proactive recommendations for operational efficiency.
- Operational Compliance: Enforce the hotel's financial policies, train staff on inventory handling, and implement strong internal control systems.
Routine Duties Breakdown
- Daily: Review F&B sales reports, check store requisitions, verify deliveries, and monitor daily consumption patterns.
- Weekly: Conduct departmental stock counts, prepare weekly variance reports, and review supplier pricing trends.
- Monthly: Direct full inventory audits, prepare comprehensive monthly cost presentations, and assist in month-end financial closing processes.
Required Qualifications & Skills
To be successful in this role, candidates should possess the following qualifications:
- Education: Bachelor’s Degree or HND in Accounting, Finance, Business Administration, Hospitality Management, or a related field. Professional certifications such as ICAN, ACCA, or CPA are a strong advantage.
- Experience: 3–5 years of proven experience in hotel cost control, accounting, or inventory management, alongside proficiency in hospitality accounting and inventory software.
- Core Competencies: Exceptional numerical and analytical skills, advanced proficiency in Microsoft Excel, high integrity, strong investigative abilities, and the capacity to meet tight deadlines under pressure.
